One week to Thanksgiving, give us a recipe from YOUR Turkey Day table

Would you care to share a recipe of something that makes YOUR Thanksgiving Day a great one?

It will start with a preparation cocktail, followed by football, throw in a turkey sandwich (with swiss & mayo), more football and more cockails.

Everyone is known for cooking some specialty in our family for which they are recognized as "the expert" and in my case it is poultry. But all poultry can be cooked with one simple, secret formula; it's so darn easy, and racks up a Whole Year's Worth of family cred.

It is: at 325 degrees, 23 minutes per pound. Baste regularly. That's it! Works from tiny chickens all the way up to the most massive turkeys, and I usually do a 21-pounder or thereabouts. This formula never fails.

When she gets back to town, I will post Mrs. Johnny's Turkey Day crab cake recipe.

I remember as kids while watching the parade we'd enjoy cinnamon toast.

I'll have a special recipe later today so keep an eye out....

OK, sometimes on Thanksgiving, Johnny enjoys cornish hens instead of turkey. The spice rub is the thing. Start with Jack's BBQ spice rub, add small amounts of garlic powder, ground chipotle powder, and throw fresh herbs of sage, thyme and rosemary on the birds. Rub the rub pretty well into the hens and inside the cavity too. Johnny like to put a pat of butter inside the birds as well as some melted butter to crisp the skin but save that until later, as you don't wanna rub off the rub.

Oven 375 for an hour and half or whenever juices run clear. The sassy hens play well with REAL cranberries.

Crunions (Myb absolute favourite)

4 jars Holland Onions, well drained
2 cups white sauce or bechamel
( A homade white sauce or bechamel is best but really, one can make the Wondra™ sauce and it's fine)
Mix in casserole dish, sprinkle with breadcrumbs, parmesan or both bake 350 for 40 - 45 mins.

I had this at a Thanksgiving party a couple years ago. Buy some snack-size Snickers bars and put them in the freezer. When they are good and frozen take off the wrappers and smash them to bits with a hammer then put the pieces in a bowl. Add to the candy pieces some diced Granny Smith Apples and fold in some whipped topping. You won't believe how good this is.
